Lemon Icebox Pie

1 (8oz) package of cream cheese, room temperature
1 (14oz) can condensed milk
1/2 cup fresh lemon juice
1 tsp vanilla flavoring
1 prepared Graham cracker pie crust

Blend all ingredients together (except crust) on high until fluffy and smooth. Pour into pie crust, and refrigerate for 4 hours. Serve with coolwhip if desired.


This is a fabulous recipe. It was easy as pie.

Marinated Cheese Squares

1/2 cup olive oil
1/2 cup white wine vinegar
3 tbsps chopped fresh parsley
3 tbsps minced green onions (optional)
1 teaspoon sugar
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
3 cloves garlic, minced
1 (2-ounce) jar pimiento, drained
1 jar capers, drained
1 (8-ounce) block cream cheese
1 (8-ounce) block mild cheddar cheese, chilled.

Combine all ingredients except cheese, pimiento and capers. Cover tightly and shake vigorously. Set aside.
Blend cream cheese with about 2 tbsps of the marinade. Cut cheddar longwise into 1/4 inch thick slices. Spread cream cheese on slice of cheddar and top with another slice of cheddar. Cut into 1 x 1 inch squares.
Stand cheese 'sandwiches' on their side in serving dish (make sure it has a lip) then pour marinade over cheese. Cover and refrigerate for at least 4 hours (overnight is great). Top with capers and pimiento, and green onion for garnish.
Serve with crackers or alone speared with toothpicks.

Note: this recipe is very user friendly and could be easily adjusted to include roasted bell peppers, sun dried tomatoes, anything your heart desires.

Howdy! How is everyone? Because this is a forum for my favorites I've decided to post my single most important beauty secret. I wear this lotion under my makeup everyday, and as a moisturizer at night. It's incredible! I would like to remind all my loved ones the importance of wearing sunscreen daily. Enjoy!

Mystery Pecan Pie

Topping: 3 eggs
1/4 cup sugar
1 cup light corn syrup
1 teaspoon vanilla extract

Pie: 1 (8-ounce) package cream cheese
1/3 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 egg
1 un-baked deep-dish (9-inch) pie shell
1 1/4 cups chopped pecans

Preheat oven to 350 degrees F.
Combine all topping ingredients in a medium bowl. Set aside.
In a medium bowl, mix cream cheese, sugar, salt, vanilla, and egg until combined. Pour into pie shell. Top with chopped pecans. Pour topping over pecans. Bake for 45 minutes. Serve warm or at room temperature.

Let there be light... and a fan!

Howdy!

To my friends and family I would like to announce that I have successfully installed a brand new ceiling fan, with a light kit in my bedroom. It took me about three hours, but it is complete and functioning properly. Last night I was able to enjoy the quiet murmur of air being gently circulated around me while I dreamt of fascinating places like Lowe's and Home Depot. Obviously, I am very proud of myself.
